“A true completo is a COMPLETE mess - you cannot eat it without napkins! Do not be shy with the mayo. In Chile, we use much more mayo than you think. And the avocado should be ripe, ripe, ripe - none of this hard avocado nonsense. If anyone asks for ketchup, you know they are not Chilean!”
Ingredients
- 4 large hot dogs (vienesas)
- 4 hot dog buns
- 2 ripe tomatoes, diced
- 2 ripe avocados, mashed
- 1 cup sauerkraut (chucrut)
- Mayonnaise (lots!)
- Chilean hot sauce (optional)
- Salt to taste
Instructions

Steam or boil the hot dogs until heated through.

Lightly toast the buns.

Season diced tomatoes with salt.

Season mashed avocado with salt.

Place hot dog in bun.

Layer on the sauerkraut.

Add mashed avocado generously.

Top with diced tomatoes.

Drizzle with LOTS of mayonnaise.

Add hot sauce if desired.
